Could a pancake breakfast get any better? Well, it does, once every bite is packed with protein to keep you full and energized all morning. All you need is one scoop!
Ingredients

1 pkg Pancake and Waffle Mix

1 scoop Vanilla Protein Powder
- 1 egg
- 1 cup + 3 tbsp milk, your choice
- 2 tbsp + 2 tsp oil, divided
- 2 tsp vanilla extract
- 2 cups plain 2% Greek yogurt

½ cup chocolate chips, optional

½ cup berries, optional
Directions
In a large bowl, whisk mix with protein blend, egg, milk, 2 tbsp oil, and vanilla. Fold in chocolate chips, if using. Let batter rest 5 min; it will continue to thicken.
Heat 1 tsp oil in fry pan over medium heat. Working in 2 batches and using a 1⁄4 cup as a guide, scoop 3–4 pancakes into pan, leaving space between them. Cook until bubbles appear on top of batter and underside is golden brown, about 3–4 min. Flip each pancake and cook until bottoms are golden brown, about 1–2 min. Repeat with remaining oil and batter.
- To serve, dollop 1⁄4 cup Greek yogurt over each pancake and add toppings, if desired.
