Roasted beets, creamy goat cheese, a sprinkle of SPG (salt, pepper & garlic) and a splash of balsamic. Simple to prepare, delicious and perfect to pair with any feast.
Ingredients

4 beets, peeled and cut into ¾-inch cubes

1 tbsp olive oil

2 tsp SPG

2 tbsp honey
-
2 tbsp balsamic vinegar

¼ cup (2 oz) goat cheese, crumbled

1/2 cup walnuts, toasted and chopped
Directions
Preheat oven to 400°F (200°C)
Toss beets with olive oil and 1 tsp SPG and place on parchment lined sheet pan.
Roast beets in the oven for 25 - 30 minutes or until tender.
While beets are roasting, in a bowl, whisk together honey, balsamic vinegar and 1 tsp SPG
Arrange beets on a serving platter, top with goat cheese and walnuts. Drizzle honey balsamic dressing over and serve.
Recipe Note
Some of our recipe testers preferred to slice instead of cube beets, or swap 1 - 2 beets for sweet potatoes.
