Roasted beets, creamy goat cheese, a sprinkle of SPG (salt, pepper & garlic) and a splash of balsamic—simple, vibrant, and an unforgettable side dish.

Ingredients

4 medium beets, roasted and sliced

1 tbsp olive oil
-
¼ cup (2 oz) goat cheese, crumbled

1/2 cup walnuts, toasted and chopped
-
2 tbsp honey
-
2 tbsp balsamic vinegar
-
1 tbsp SPG
Directions
Preheat oven to 400°F (200°C)
Toss beets with olive oil and place on parchment lined sheet pan.
Roast beets in the oven for 45 minutes or until tender. Let cool and slice
While beets are roasting, in a bowl, whisk together honey, balsamic vinegar and SPG
Arrange beets on a serving platter, top with goat cheese and walnuts. Drizzle honey balsamic dressing over and serve.
