If you are a fan of banana bread, you will love these pancakes. Gluten free with the flavor of banana bread and close to the texture of a classic pancake. Top with butter, banana slices, warm maple syrup (and greek yoghurt if you want to up the protein!)

Ingredients
- 1 large ripe banana

1 pkg Sweet Banana Bread Mix
- 1 egg
- 1 cup milk
- 2 tbsp oil, for batter
- ½ cup finely chopped walnuts
- 1 -2 tablespoon unsalted oil or butter for pan (more as needed)
Directions
Place banana in a large mixing bowl and mash.
- Whisk in egg, milk, and 2 tbsp oil. Add mix and walnuts. Let batter rest 3 min, it will continue to thicken. If batter is too thick, add water 1 tbsp at a time to adjust consistency.
- Meanwhile heat oil or butter in pan over medium heat.
- Scoop ¼ cup of batter at a time into pan 2 or 3 at a time, leave space between pancakes.
- Cook 2-5 min, look for bubbles to appear on top of pancake batter. Flip, cook for 1-2 min.
- Repeat steps 3-5, cooking times will vary.
Recipe Note
The batter will thicken over time. If needed between batches, add water, 1 tbsp at a time, to thin it out to desired consistency.
