Turkey Stock

Ingredients

  • 1 turkey carcass
  • 12 cups cold water
  • 2 celery stalks, chopped
  • 2 carrots, chopped
  • 1 onion, skin on, quartered
  • 2 tsp SPG

Preparation

  1. Place all ingredients in large stock pot.
  2. Bring to boil, reduce temperature to slow simmer.
  3. Simmer for 2 hours, skimming any foam that collects on the surface.
  4. Strain and use turkey stock for soups and stews.
