Quick & Easy Tortilla Soup

This Quick & Easy Tortilla Soup brings bold flavours to the table in minutes.  It’s a hearty one-pot meal that feels homemade without the fuss. Top with crispy tortilla strips, cheese or guacamole for a comforting bowl everyone will love.

Quick & Easy Tortilla Soup

Ingredients

  • 1 tbsp Guacamole
  • 4 cups broth (vegetable or chicken)
  • 1 - 28 oz (796 ml) can diced tomatoes
  • 1 - 19 oz (540 ml) can black beans, drained and rinsed
  • 1 cup frozen corn
  • Tortillia chips, crumbled (optional)

Preparation

  1. Combine first 5 ingredients in a medium sized pot and simmer for 10 minutes
  2. Season to taste with salt, pepper and additional Guacamole
  3. Top each serving with crumbled tortilla chips

Recipe Note

Add a dollop of prepared Ranch or Guacamole Dip and a squeeze of lime to each bowl before serving. 

Sprinkle with grated Cheddar or Monterey Jack Cheese.
