Mashed Cauliflower

This mashed cauliflower recipe is the ultimate low-carb, super-comforting dish. With just 5 ingredients it is quick and easy on busy weeknights or when you need a fast and delicious side dish. 

Mashed Cauliflower

Ingredients

  • 1 large head cauliflower (6 cups chopped cauliflower florets)
  • 2 tbsp melted butter (unsalted)
  • 2 tbsp Herb & Garlic
  • 2 tbsp cream cheese
  • SPG, to taste

Preparation

  1. Place cauliflower in a pot of salted cold water, bring to a boil, and cook until tender (about 12 minutes). Drain and transfer to a food processor.
  2. Puree the cauliflower with butter, Herb & Garlic and cream cheese until smooth and creamy.
  3. Season with SPG to taste.

Recipe Note

You can drizzle some melted butter or sprinkle chives and Better than Bacon on top if you’d like before serving.
