Italian Breaded Pork Chops

Ingredients

  • 2 eggs
  • 1 pkg Italian Meatball Seasoning
  • ¼ cup grated Parmesan cheese
  • 2 lbs (900 g) boneless, fast-fry pork loins

Preparation

  1. Preheat the oven to 425° F.
  2. In a bowl, whisk eggs.
  3. In a separate shallow bowl, combine the seasoning and Parmesan.
  4. Once piece at a time, dip pork in eggs, then press into the seasoning mixture to coat.
  5. Place pork on racks, leaving some space between each piece. If desired, use a basting brush to lightly dab oil onto the coated pork. Bake 12 min or until cooked through.

Recipe Note

Look for “fast fry” boneless pork loins or chops—they’re super thin and cook quickly. If you can’t find those at the grocery store, you can thin out the pork yourself. Simply place each piece of pork between plastic wrap and gently pound with a meat mallet (or rolling pin) until the desired thickness.

Try these in the air fryer! Air fry at 390° F for 8–10 min, flipping halfway through, or until cooked. For a crispier coating, spray both sides with cooking oil. Depending on the size of your air fryer, you may have to do this in a few batches.
