Zucchini — from the Italian word "zucca", meaning squash – is low in calories and an excellent source of folate, potassium and vitamin A.

Ingredients

1 lb (450 g) penne or gluten-free pasta

3 tbsp olive oil

1/4 tsp crushed chilies (or to taste)

1 lb (450 g) coarsely grated zucchini

3/4 cup grated Parmesan cheese

1 tbsp Herb & Garlic Dip Mix

Black Pepper (to taste)

Preparation

  1. Cook pasta according to package directions. Drain and set aside.
  2. Heat oil in a frying pan over medium heat. Add zucchini and crushed chilies and cook for approximately 3 minutes.
  3. Stir in Parmesan and Herb & Garlic Dip Mix. Stir in pasta.
  4. Season with Pepper and serve.
