A fresh, flavour-forward twist on a classic fish taco. It’s bold without heat, satisfying yet fresh, and completely family-friendly.

Fish Tacos with Mango Avocado Salsa

Ingredients

  • 1 lime
  • 1 pkg Sweet Garlic Chicken
  • 1 tbsp oil + more for brushing
  • 4-4 oz (113 g) skinless salmon fillets
  • 1 avocado
  • 1 mango
  • 1 tsp Guacamole
  • 8 corn tortillas

Preparation

  1. Preheat grill to medium heat. Lightly brush with oil to prevent sticking.
  2. Slice lime in half. Squeeze juice from half of the lime into small bowl. Add seasoning and oil; whisk to combine. It will be a thick sauce.
  3. Brush the sauce over both sides of the salmon fillet, making sure to flip gently (fish can be delicate!).  
  4. Barbecue, with lid closed, 3 min per side or until salmon is cooked through. Making sure to flip carefully halfway through. 
  5. When salmon is cooked use a fork to flake into bite-sized pieces.
  6. To make salsa, dice avocado and mango and place in medium-sized bowl Squeeze in juice from remaining half lime.  Add 1 tsp Guacamole seasoning. Stir to combine.
  7. Divide salmon and salsa between tortillas. Add additional toppings, if desired.
