This quick corn chowder is a comforting, creamy soup with the natural sweetness of corn and comes together in less than 20 minutes using fresh or frozen for an easy weeknight meal.

Corn Chowder

Ingredients

  • 1/4 cup butter
  • 1 small onion, chopped
  • 2 Tbsp CCB
  • 1/4 cup all purpose flour
  • 2 cups prepared Nourish Broth
  • 1 cup non-fat evaporated canned milk
  • 2 cups fresh, frozen or canned corn
  • 1 Tbsp 3 Onion
  • Salt and Pepper, to taste

Preparation

1. Melt butter in a pot over medium heat
2. Add onion and CCB. Cook for 5 minutes or until onions are softened.
3. Spinkle in flour and stir for 1 - 2 minutes
4. Slowly add Nourish Broth and milk. Summer, whisking until smooth.
5. Stir in corn and 3 Onion Dip Mix. Season with salt and appear, if you like, and serve hot.

Recipe Note

Use evaporated milk instead of cream to add creamy texture without added calories.
