Chicken Quesadillas

Quick, easy, cheesy and delicious.  Swap chicken for pulled pork, ground beef or turkey.

Chicken Quesadillas

Ingredients

  • 2 tbsp oil
  • 2 bell peppers, thinly sliced
  • ½ onion, thinly sliced
  • 1 - 2 tbsp Taco Seasoning
  • 1 lb boneless, skinless chicken breast, cut into bite-sized pieces
  • 2 cups grated Monterey Jack or cheddar cheese
  • 8 medium whole wheat tortillas
  • 2 green onions, thinly sliced (optional)

Preparation

  1. Preheat oven to 400 °F (205 °C).
  2. In a large skillet over medium-high heat, heat 1 tbsp oil. Add peppers and onion and season with salt. Cook until soft, 5 minutes. Transfer to a plate
  3. Add 1 tbsp oil to pan and heat over medium-high heat. Add chicken to pan and season with 1 - 2 tbsp Taco Seasoning. Cook, stirring occasionally, until golden and cooked through, 8 minutes. Add peppers and onion back to pan and turn-off heat.
  4. Lay 4 tortillas on lined sheet pan. Divide mixture between tortillas, spreading to within ½” (1cm) of edge. Top with cheese.
  5. Top with remaining 4 tortillas and bake 7 minutes.

Recipe Note

Cut into wedges and serve with Guacamole and sour cream.

Make more and freeze extra. Cook, let cool, wrap well and freeze for up to 4 months.
