Green Goddess Super Bowl

Ingrédients

  • 8 cups roasted veggies
  • 2 cups cooked grains, such as rainbow quinoa
  • 2 cups chickpeas, cooked or canned, drained and rinsed
  • 2 hardboiled eggs
  • ½ avocado, quartered
  • ½ cup prepared Creamy 3 Onion Salad Dressing (see below)

Préparation

  1. Arrange veggies, grains, chickpeas, eggs, and avocado in four serving bowls. 
  2. Drizzle with dressing and serve.

Notes 

To Make Creamy 3 Onion Salad Dressing whisk together:
1 cup buttermilk
1 tbsp 3 Onion Dip Mix or Herb & Garlic Dip Mix
1 tbsp low-fat mayonnaise
SPG or salt and pepper (to taste)
