Zesty Quinoa & Tomato Salad
Quinoa is packed with energy-boosting protein. Make a big batch of quinoa and add to any salad or side dish.
1 cup quinoa, rinsed and drained
2 cups water
2 yellow or red tomatoes, chopped
1 - 2 green onions, sliced – optional
1⁄2 cupPoco Picante Salsa
- Combine quinoa and water in Multipurpose Pot - 8 cup. Bring to a boil over medium-high heat.
- Reduce heat to medium-low and simmer for 15 minutes, or until water is absorbed. Remove and let stand for 5 minutes.
- Add remaining ingredients and mix well. Serve immediately or chill for 30 minutes and serve as a cold salad.
