Cheesy tomato flavour coupled with antioxidant-rich yams makes this dish delish—and in less than 20 minutes!
2 1⁄2 cups diced yams
1 tbspGuacamole Dip Mix
6 corn tortillas
1 can (19 oz /540 ml) diced tomatoes
2 tbsp Nacho Cheese Dip Mix
1 cup grated cheddar cheese
- Combine yams and Dip Mix in a Multipurpose or Square Steamer. Cover and microwave on high for 3–4 minutes. Mash lightly with the back of a fork.
- Fill tortillas with yam mixture. Roll and place seam-side down in a Multipurpose or Square Steamer.
- Stir Nacho Cheese Dip Seasoning into the diced tomatoes, and pour over rolled tortillas.
- Sprinkle with cheese, cover with lid, and microwave on high for 5 minutes.
