- Preheat oven to 425° F
- Scrub potatoes and pierce several times with a fork. Place in Multipurpose Steamer and microwave for 5–7 min, until easily pierced with a fork.
- Cut potatoes in half lengthwise and carefully scoop out insides, leaving a 1⁄4” thick shell.
- Mash potato with sour cream, dip mix, cheese, Sea Salt and Pepper. Spoon back into potato skins.
- Arrange stuffed potatoes in an ovenproof baking dish and bake for 15–20 minutes.
Serve with 4 oz (113 g) lean protein and 2 cups leafy greens with 1 tbsp Epicure Dressing.
