This is a wonderful low-sodium stock. Use as a base for soups and stews.
1 turkey carcass
12 cups cold water
2 celery stalks
1 onion, skin on
1 tsp Black Pepper
- Place all ingredients in a large pot and bring to a boil. Reduce temperature to a slow simmer.
- Simmer 2 hours, skimming off any foam that collects on the surface. Strain.
Per serving: Calories 60, Fat 2 g (Saturated 0.5 g, Trans 0 g), Cholesterol 25 mg, Sodium 75 mg, Carbohydrate 4 g (Fibre 1 g, Sugars 2 g), Protein 7 g.
Preparation Tip: To easily remove fat from surface of stock, chill before using.
