Ingredients
1 pkg (14 oz/400 g)
extra-firm tofu
1 tbsp
oil
2 tbsp, or Epicure seasoning of your choice

Preparation
  1. Preheat oven to 475° F (245° C).
  2. Cut tofu lengthwise into four slabs. Place on a Sheet Pan lined with paper towels, cover with another layer of paper towels, and cover with something heavy, like a frying pan. Let stand for 10 minutes until liquid has pressed out.
  3. Remove tofu from paper towels and cut slabs lengthwise into six thin strips.
  4. Brush tofu with oil and sprinkle with seasoning.
  5. Arrange on a crisper and bake for 10–15 minutes, turning halfway through, until golden brown.
