Sylvie's Shrimp and Avocado Boats

Ingredients
2 ripe avocados, mashed (reserve avocado shells)
1⁄2 cup light sour cream
1 tbsp lemon juice
3 tbspGuacamole Dip Mix
1 cup salad shrimp, reserve a few for garnish
2 tsp chives
Preparation
- Combine avocado, sour cream, lemon juice and dip mix. Refrigerate 1 hour to allow flavours to mellow.
- Fold shrimp into prepared guacamole.
- Scoop filling into reserved avocado shells. Garnish with reserved shrimp and a sprinkle of chives.

Serve with 1⁄2 cup shrimp (add more to your boat!) 2 cups mixed greens, and 1 slice of bread.
