Stir-fried Beef Curry with Mixed Vegetables
1 lb (450 g) thin strips of sirloin beef
1 tbsp vegetable oil
2 green onions, sliced
1 red bell pepper, thinly sliced
2 tbsp Mango Curry Dip Mix
3⁄4 cupVegetable Broth
1 1⁄2 cups frozen mixed vegetables
- Preheat frying pan or Wok to medium-high. Lightly coat with oil and stir-fry beef with Asian Stir-fry Seasoning for 3–5 minutes.
- Remove beef from pan, reduce heat to medium and stir-fry onion and pepper.
- Once onion and pepper start to soften, return beef to pan and add Mango Curry Dip Mix. Stir-fry for about 1 minute, until aromatic. Add Bouillon.
- Bring to a simmer, add vegetables and cook for 3–5 minutes.

Serve with parboiled rice or rice noodles.
