4 cups cooked baby potatoes, halved
6 cups coleslaw mix
2 cups mixed cherry tomatoes, halved
2 cups cucumber ribbons
1 avocado, sliced
1 lb (450 g)Southern Baked Chicken, prepared, cubed
3⁄4 cup Epicure dressing of your choice, prepared
Smoky Roasted Tomato Nutritional Yeast Topper, to taste (optional)
Preparation
- Arrange first six ingredients in four bowls
- Drizzle with your choice of dressing
- Shake on nutritional yeast sprinkle if using.
