Shrimp Cocktail Gazpacho
This recipe works well with other types of fish as well.
1 lb (450 g) cooked shrimp
1 red pepper, diced
1 tomato, diced
1 cucumber, diced
3 cupsClassic Canadian Caesar, prepared
1 lemon, cut into wedges, for garnish
- Gently combine first four ingredients in a mixing bowl. Top with Bloody Mary or Caesar Cocktail.
- Ladle into small bowls.
- Use lemon wedges to garnish.
