Sautéed Zucchini and Tomato

Ingredients
2 tsp vegetable oil
2 1⁄2 cups roughly chopped unpeeled zucchini
1 1⁄2 cups roughly chopped tomato
1 tbspMarinara Sauce Mix
Sea Salt (Grinder), to taste
Black Pepper (Grinder), to taste
Preparation
- Heat a frying pan to medium-high. Add vegetable oil and sauté zucchini for about 4 minutes, or until pleasantly browned on all sides.
- Add tomato and Marinara Sauce Mix and sauté an additional 1–2 minutes. Remove from heat and season with Sea Salt and Pepper.
- Serve immediately.

Tips
For a lower-sodium version without sacrificing flavour, replace some of the salt with vinegar.
