Sautéed Zucchini and Tomato

Ingredients
2 tsp
vegetable oil
2 12 cups
roughly chopped unpeeled zucchini
1 12 cups
roughly chopped tomato
1 tbsp
Sea Salt, to taste
Black Pepper, to taste

Preparation
  1. Heat a frying pan to medium-high. Add vegetable oil and sauté zucchini for about 4 minutes, or until pleasantly browned on all sides.
  2. Add tomato and Marinara Sauce Mix and sauté an additional 1–2 minutes. Remove from heat and season with Sea Salt and Pepper.
  3. Serve immediately.
Tips

For a lower-sodium version without sacrificing flavour, replace some of the salt with vinegar.
