Roasted Zucchini Pizza

Ingredients

medium zucchini, sliced into 1/4” thick rounds, about 30 slices
2 tsp
olive oil
2 tsp
Pizza Seasoning
13 cup
Marinara Sauce, prepared
13 cup
finely grated mozzarella

Preparation
  1. Arrange oven rack in top third of oven. Preheat broiler to high.
  2. In bowl, toss zucchini with oil and seasoning. Arrange slices close together on Sheet Pan.
  3. Broil 2 min; turn pieces over. Spoon about 12 tsp sauce on top of each zucchini round; sprinkle with cheese. Broil until cheese melts, 2 more min. Best served warm.
Tips

Stir chopped salami or pepperoni into Marinara Sauce to make a meat pizza.

Make Ahead Tip:

Prepare sauce, portion into small servings, and freeze up to 3 months. Slice and season zucchini; refrigerate overnight.
