Roasted Zucchini Pizza
2 medium zucchini, sliced into 1/4” thick rounds, about 30 slices
2 tsp olive oil
2 tsp Pizza Seasoning
1⁄3 cupMarinara Sauce, prepared
1⁄3 cup finely grated mozzarella
- Arrange oven rack in top third of oven. Preheat broiler to high.
- In bowl, toss zucchini with oil and seasoning. Arrange slices close together on Sheet Pan.
- Broil 2 min; turn pieces over. Spoon about 1⁄2 tsp sauce on top of each zucchini round; sprinkle with cheese. Broil until cheese melts, 2 more min. Best served warm.
