1 1⁄2 lbs (680 g) assorted root vegetables, such as carrots, parsnips, and red onions
2 tbsp vegetable oil
Sea Salt, optional
Black Pepper, optional
- Preheat oven to 400° F (205° C). Adjust oven rack to middle.
- In mixing bowl, combine chopped root vegetables with vegetable oil, Seasoning, Salt and Pepper. Toss to coat evenly.
- Spread vegetables evenly over crisper and roast for 40 minutes. Vegetables should be fork tender but not soft when done.
