‘Pumpkin’ Mousse Cheesecakes for Verrines
‘Verrine’ comes from verre, the French word for glass. A Verrine is an impressive appetizer or dazzling dessert elegantly presented in a petit glass.
1⁄2 cup ginger cookie crumbs
1⁄2 cup spreadable cream cheese
4 tsp brown sugar, divided
1⁄2 tsp Pumpkin Pie Spice
1⁄2 cup whipping cream
- Place 1 tbsp crumbs in the bottom of 6 verrines. Set aside.
- Beat cream cheese with 2 tsp brown sugar and Pumpkin Pie Spice.
- Whip cream with remaining brown sugar in a separate bowl. Fold into cream cheese mixture. Divide between verrines.
- Top with remaining crumbs and serve.
