Morning Glory Apple Loaf
Turn Morning Glory Muffin Mix into a stellar, gluten-free loaf with real bits of real carrot, apple, cranberry, and coconut.
1⁄4 cup cold, unsalted butter
1⁄2 cup milk, your choice
- Lightly oil Rectangular Steamer.
- Dice unpeeled apple. Chop cold butter into small pieces and set aside.
- In a large bowl, whisk egg and milk. Stir in muffin mix. Using a spoon, fold in diced apple and butter; don’t overwork batter.
- Scrape batter into steamer. Microwave uncovered on high for 8 min. Rest in steamer 6 min; invert onto Cooling Rack. Cool completely before serving. Or, bake in preheated 350° F oven, 50–55 min. Cool in steamer 15 min, then unmold.
