Welcome to the new age of “Mac.” ‘Later,’ dairy! We’ve ramped up cheesy creaminess with nooch (aka nutritional yeast). It not only packs serious flavour, but it’s also rich in vitamin B12 for a boost of energy and better brain power. Kid- and student-approved!

Serve with 4 oz (113 g) lean protein and 1 cup sliced veggies.
Ingredients
3 cups uncooked macaroni or bite-size pasta
1 pkg Modern Mac Seasoning
2 cups unsweetened oat milk, or milk of your choice
2 tbsp plant-based butter or olive oil
Preparation
- Cook macaroni in Multipurpose Pot according to package directions, then drain.
- Meanwhile, place seasoning in large, microwave-safe measuring cup or bowl. Gradually whisk in milk, 1⁄4 cup at a time, whisking well between additions. Microwave, uncovered, on high 4–5 min, or until creamy.
- Stir butter into cooked pasta. Stir in sauce; it will thicken as it sits.

Tips
Before serving, stir in 1 cup frozen peas or steamed broccoli florets. Call the florets “trees” and you may even tempt kids to eat broccoli!
