Maple Butternut Squash Purée

Vegetable purées pair perfectly with roasted meats, grain salads, and roasted vegetables; or, serve them as a side dish with your favourite dinner!

Serve with 4 oz (113 g) lean protein and 2 cups leafy greens with 1 tbsp Epicure Dressing.
Ingredients
6 cups butternut squash cubes
1 1⁄2 tbsp Maple Kettle Corn Popcorn Seasoning
1⁄2 cup milk
2 tbsp maple syrup
1 tbsp unsalted butter
1⁄4 cup raw, unsalted pumpkin seeds
Preparation
- Place squash in Multipurpose Steamer. Cover and microwave on high for 10 min.
- Using the Ground Meat Separator, coarsely mash squash with seasoning, milk, maple syrup, and butter. Using an immersion blender, blend mashed squash mixture until smooth.
- Top with pumpkin seeds.

Tips
Don’t have an immersion blender? Use a food processor or blender instead; but, be aware that when hot foods are blended, the steam needs somewhere to escape. Be very careful! Start blending slowly and with a small amount.
