Ingredients
12 lb (225 g)
linguini or gluten free pasta
1 recipe prepared
El Greco Finishing Sauce, or sauce of your choice
2 cups
cherry tomates
juice and rind of 1 lemon
3 cups
fresh arugula
14 cup
freshly grated Parmesan cheese, optional
Sea Salt, to taste
Black Pepper, to taste

Preparation
  1. In a Multipurpose Pot, cook pasta according to package directions. Drain, reserving some of the pasta water.
  2. Toss pasta with the prepared finishing sauce, lemon juice, rind, and arugula. Add a little pasta water to moisten if required.
  3. Sprinkle with Parmesan, season, and serve.
