Zucchini — from the Italian word "zucca", meaning squash – is low in calories and an excellent source of folate, potassium and vitamin A.
1 lb (450 g) penne or gluten-free pasta
3 tbsp olive oil
1 lb (450 g) coarsely grated zucchini
1⁄4 tsp crushed chilies, or to taste
3⁄4 cup grated Parmesan cheese
Black Pepper, to taste
- Cook pasta according to package directions. Drain and set aside.
- Heat oil in a frying pan over medium heat. Add zucchini and crushed chilies and cook for approximately 3 minutes.
- Stir in Parmesan and Herb & Garlic Dip Mix. Stir in pasta.
- Season with Pepper and serve.
