Zucchini — from the Italian word "zucca", meaning squash – is low in calories and an excellent source of folate, potassium and vitamin A.


Ingredients
1 lb (450 g)
penne or gluten-free pasta
3 tbsp
olive oil
1 lb (450 g)
coarsely grated zucchini
14 tsp
crushed chilies, or to taste
34 cup
grated Parmesan cheese
1 tbsp
Black Pepper, to taste

Preparation
  1. Cook pasta according to package directions. Drain and set aside.
  2. Heat oil in a frying pan over medium heat. Add zucchini and crushed chilies and cook for approximately 3 minutes.
  3. Stir in Parmesan and Herb & Garlic Dip Mix. Stir in pasta.
  4. Season with Pepper and serve.
Tips

Serve with white fish, chicken breast or shrimp, seasoned and steamed for 5–7 minutes in Rectangular Steamer.
