1 pkg Gazpacho Seasoning
1 can (28 oz/796 ml) diced tomatoes
1⁄4 cup red wine vinegar
2 tbsp olive oil
1⁄2 cup water
Topping suggestions (optional): Diced cucumber, chopped chives, halved or quartered cherry tomatoes
- In a blender or food processor, purée seasoning with tomatoes, vinegar, and oil.
- Gradually pulse in water to desired consistency.
- Chill at least 2 hours before serving; garnish with toppings as desired.
