Egg Muffin To Go

Serve with 1⁄2 cup 2% plain Greek yogurt and 1⁄2 cup mixed berries.
1 egg or 2 egg whites
1 whole wheat English muffin
1 1⁄2 tsp preparedLemon Dilly Dipor3 Onion DiporCCB Dip
1 slice low-fat cheese
1 slice tomato
1⁄4 cup baby spinach
Sea Salt (Grinder), to taste
Black Pepper (Grinder), to taste
- Fry egg in a fry pan over medium heat.
- Meanwhile, toast English muffin. Spread one half of toasted English muffin with dip. Top with cheese, tomato, and spinach.
- Season egg to taste with salt and pepper; place on top of spinach. Sandwich with muffin top.
