Crispy Parmesan Chicken

Serve with mashed potatoes and steamed veggies.
1⁄2 cup fine breadcrumbs, or gluten free breadcrumbs
3 tbsp grated Parmesan cheese
1 tsp Poultry Seasoning
1 tbsp3 Onion Dip Mix
3 tbsp low-fat milk
3 tbsp vegetable oil
4 (4 oz/113 gr) boneless chicken breasts
- Preheat oven to 375° F (190° C).
- Combine first four ingredients in shallow pan. In a separate bowl, whisk milk and vegetable oil.
- Dip chicken pieces in milk and oil mixture. Thoroughly coat in crumb mixture and place on Sheet Pan lined with parchment paper.
- Bake approximately 35 minutes, or until chicken reaches an internal temperature of 175° F (80° C) .

Look for air-chilled chicken breasts at your grocery store. Sometimes chicken breasts are plumped up with salt and water causing them to shrink when cooking.
