Chocolate Cranberry Truffles
Sweet gift idea: tuck these into a small box lined with tissue paper.
1 1⁄4 cups dark chocolate chips
1⁄2 cup cranberry sauce
2 tbsp whipping cream
3 tbsp cocoa powder
3 tbsp icing sugar
- Melt first 3 ingredients in a metal or glass bowl over steaming (not boiling) water, stirring regularly.
- Remove mixture from heat. Cool to room temperature. Once cool, place bowl in refrigerator for minimum 30 minutes.
- Place cocoa and icing sugar on separate plates. Roll teaspoons of chilled truffle mixture in hands (truffles can be irregular in shape), then roll in either Cocoa or icing sugar.
- Store in refrigerator and remove 5 minutes prior to serving.
