Chilled Strawberry Soup with Pesto and Black Pepper
Rich in potassium, and a source of fibre, strawberries contain powerful anthocyanins, which may help reduce inflammation, while also offering cancer prevention properties.
2 cups strawberries, hulled
1 cup plain yogurt
1 cup buttermilk
1 tbspPesto Sauce Mix
2 tbsp raspberry or balsamic vinegar
1 - 2 tspBlack Pepper (Grinder)
- Blend all ingredients in a food processor until smooth.
- Refrigerate for 2 hours before serving.
- Garnish with sliced strawberries.
