Chilled Minted Pea Soup
1 tbsp dried mint, or 3 tbsp fresh mint
5 cupsNourish BrothorVegetable Broth
3 tbsp3 Onion Dip Mix
1 lb (450 g) frozen green peas
Sea Salt (Grinder), to taste
Black Pepper (Grinder), to taste
1 cup sour cream – optional
- Combine first 4 ingredients in a Multipurpose Pot - 8 cup over medium-high heat.
- Reduce heat and simmer for 20 minutes. Cool slightly.
- Purée in blender or food processor until smooth.
- Season to taste with Salt and Pepper. Serve chilled.

Blend with sour cream before serving, or serve chilled soup with a dollop of sour cream.
