Chicken Caesar Pasta Salad
Skip bringing the traditional pasta salad to the summer potluck. This pasta salad has a creamy Caesar dressing and is full of fresh, crunchy veggies. It’s simple to make and is delicious hot or cold, which means you can easily make it ahead of time.
2 cupsRotisserie Chicken, cooked, or 2-19 oz cans white navy beans
4 cups pasta, cooked
2 cups romaine lettuce, shredded
2 cups cherry tomatoes
1 cup cucumber, chopped
1⁄4 cup cheddar cheese, shredded
2 tbspCaesar Dressing Mix
2 tbsp light mayonnaise or Greek yogurt
1 tbsp lemon juice
1⁄4 cup olive oil
1⁄4 cup milk, your choice
- Chop cooked Rotisserie Chicken into bite-size pieces and set aside.
- In a large pot, cook pasta according to package directions.
- In a small mixing bowl, combine dressing ingredients. Set aside.
- In a large serving bowl, combine chicken, pasta, dressing, lettuce, veggies, and shredded cheese. Serve and enjoy!
