Rice is the perfect side dish to make in the microwave, using Epicure’s Multipurpose Steamer. Ready in 20 min, this is our take on Mexican rice. It has a beautiful red hue, a medium heat, and a little bit of tang! Perfect to accompany your favourite Tex-Mex mains.  


Ingredients

Toppings (optional): chopped cilantro, sliced avocado, lime wedges, Chili Flakes & Garlic Topper

Preparation
  1. In Round or Multipurpose Steamer, combine rice, water, rub, and tomato paste. Top with tray; microwave, uncovered, on high for 17–19 min, or until tender. Using a fork, stir to fluff.
Perfectly Balance Your Plate

Serve with 4 oz (113 g) lean protein, 1 cup steamed veggies, and 1 tbsp Epicure Dip.
