This simple steak recipe is easy to make and always delicious. Using high heat create a smoky-sweet crust. Simple to make, but big on flavor. Worthy of using on high quality steaks and also a way to elevate economical steaks as well.

Ingredients
- 1 lb (450 g) grilling steak, such as ribeye, strip, t-bone, skirt, chuck-eye or your favourite cut (about 1” thick)

2 - 3 tbsp BBQ Chicken & Rib Rub
- 1 - 2 tbsp olive oil
Directions
- Pat steaks dry thoroughly with paper towels.
- Apply the rub by sprinkling generously on all sides of the steak. Press the seasoning into the meat (don’t rub back and forth) Let rest at room temp 20–30 minutes (or refrigerate uncovered up to 12 hours for deeper flavor).
- Preheat a cast iron skillet to high heat. Once hot (should take 2 - 3 minutes) add the olive oil.
Using tongs carefully place steaks in the hot pan. Sear the first side until browned, about 2 - 4 minutes, depending on the thickness of the meat (do not move before flipping to form a crust). Flip and sear the other side for another 2 - 4 minutes (for medium-rare: cook 3–4 minutes per side depending on thickness until it reaches an internal temp of 130°F / 54°C).
- Rest the steak - transfer to a cutting board, tent loosely with foil, and rest 5–10 minutes before slicing (this locks in juices and finishes the cooking)
- Slice against the grain and serve!
Recipe Note
TIP: If you want steakhouse-style, finish with a small pat of butter on top right before serving.
