Give new life to leftover Italian Meatballs and Marinara Sauce with these mini pizzas. A fun and delicious recipe to make with your little ones and to get them excited about helping in the kitchen. No need to worry about rolling out dough – simply grab some English muffins to use as a base and choose your favourite toppings.

Ingredients

4 English muffins
Oil, for brushing
8 prepared Italian Meatballs
½ cup prepared Marinara Sauce or Alfredo Sauce 
½ cup grated cheese, your choice

Preparation

  1. Preheat oven to 400° F. 
  2. Split muffins and arrange halves, cut side up, on a pan. Lightly brush with oil. Bake 4 min, or until just starting to golden.  
  3. Meanwhile, slice the meatballs into quarters.
  4. Spread 1 tbsp of sauce over each muffin half, and then sprinkle with 1 tbsp of cheese. Arrange 4 meatball quarters over each muffin.  
  5. Bake 10 min, until cheese is melted and the muffins are browned on the edges.
