This is a simple, no-cook pasta sauce. Fresh tomatoes are the star here, so be sure you’re using ripe juicy ones. Recipe is uber flexible—make it with any kind of tomato, such as plum, grape, cherry, or funky-shaped heirloom ones. You should have 3 cups chopped of whatever you choose.

Ingredients

2 cups penne
1 lb (450 g) ground chicken
3 medium tomatoes
2 tbsp balsamic vinegar
2 tbsp olive oil
2 tbsp Marinara Sauce Mix
½ cup grated Parmesan cheese
Toppings (optional): balsamic vinegar reduction, basil leaves

Preparation

  1. In a large pot cook pasta according to directions. Drain.  
  2. Meanwhile in a pan, over medium heat, cook chicken for 5 - 7 minutes or until cooked through. Drain excess liquid.
  3. Chop tomatoes. Remove cores, if desired.  
  4. Add tomatoes, vinegar, oil, seasoning and cooked chicken to pot; toss with pasta. Stir in cheese. Add toppings, if desired.
