Ingredients

  • 1 medium tomato (chopped)
  • 1 can (14 oz /398 ml) black beans (drained and rinsed)
  • 1 can (12 oz/341 ml) corn (drained)
  • 2 tbsp Poco Picante Salsa Mix
  • 3 tbsp lemon or lime juice
  • Sea Salt (to taste)
  • Black Pepper (to taste)
  • 2 tbsp olive oil
  • 1 small red onion (chopped)

Preparation

  1. In a medium bowl, combine first 7 ingredients.
  2. Heat frying pan over medium heat. Add oil and onion, and sauté for 2 minutes.
  3. Add remaining ingredients, stir, and gently warm for approximately 5 minutes.
