Ingredients


Makes 4–6 servings
  • 1 Tbsp (15 ml) Soothing Wellness Tea
  • 1 C (250 ml) boiled hot water
  • 1 can (14 oz/398 ml) unsweetened coconut milk
  • 1 medium onion, chopped
  • 2 tsp (10 ml) Minced Garlic
  • 2 jalapeños, stemmed – optional
  • 2 Tbsp (30 ml) fresh lime or lemon juice
  • 1 Tbsp (15 ml) fish sauce (such as nuoc nam or nam pla), – optional
  • Sea Salt (Grinder), to taste
  • Black Pepper (Grinder), to taste
  • 3 lbs (1,4 kg) whole chicken wings or combination of pieces

Preparation


 
  • Preheat oven to 375° F (190° C).
  • In a blender or food processor, combine all ingredients except chicken. Purée until a smooth marinade forms.
  • Place chicken in a large baking dish. Pour marinade overtop and turn chicken to coat evenly. Cover and roast, turning over and basting half way through, until fully cooked, 35–40 minutes.
