Preparation


 
  • Simmer first 8 ingredients together until tender in Multipurpose Pot - 12 C . Drain, reserving broth. Set vegetables aside to cool.
  • Melt butter over medium-high heat. Stir in flour and Cheese, Chives & Bacon Dip Mix, stirring until bubbly.
  • Add reserved broth, stirring continuously. Add cream, stir and bring to a simmer, stirring frequently, until thickened. Add cheddar and stir until melted.
  • Mash cauliflower into small pieces. Add to cheese sauce. Bring soup to a simmer and serve.

Make it a Big Batch: Make extra, let cool in family- or individualized-portioned containers, label and freeze for an easy meal later. Simply reheat in (p.1006715), or microwave until thoroughly heated.
