Ingredients
12 cup
coconut milk
2 tbsp
peanut butter
1 tbsp
satay sauce
1 tsp
lime juice
2 tsp
vegetable oil
1 lb (450 g)
boneless, skinless chicken breasts, sliced into 1” strips

Preparation
  1. Whisk first 4 ingredients together and set aside.
  2. Place wok over medium-high heat. Add oil and chicken and cook for 3 min, or until lightly golden brown.
  3. Add satay sauce and cook for another 3 min.
Tips

Serve warm with rice or noodles with a side of vegetables, or add to a Vegetable Pad Thai.

Make it vegetarian: Swap chicken for 20–24 oz (600–680 g) firm organic tofu.
