Ingredients


Makes: 6 servings
  • 1 1/4 C (310 ml) water
  • 1 pkg Epicure’s What’s for Dinner? Enchilada Sauce Mix
  • 6 tortillas
  • 3 C (750 ml) cooked chicken breast
  • 1 C (250 ml) prepared Epicure’s Salsa, – your choice
  • 1 1/2 C (375 ml) low-fat cheese

Preparation


 
  • Preheat oven to 350° F (175° C).
  • Place water into a saucepan, then add What’s for Dinner? Enchilada Sauce Mix, stirring continuously. Bring sauce to a boil, reduce heat and stir while simmering for 5 minutes. Set aside.
  • In a medium mixing bowl, combine chicken, 1 cup (250 ml) cheese and Salsa. Set aside.
  • Fill tortillas with chicken and salsa mixture. Roll and place seam-side down in a baking dish. Pour sauce evenly overtop and top with remaining grated cheese. Bake in oven for 15–20 minutes.

Serving Suggestion: Serve with a side salad and prepared Epicure’s Dressing.
