Ingredients


Makes: 2 servings
  • 1 can (6oz/170 g) light tuna, packed in water, drained
  • 1 apple, cored and diced
  • 2 1/2 Tbsp (37.5 ml) 2% plain Greek yogurt, or dairy-free alternative
  • 2 tsp (10 ml) Guacamole Dip Mix
  • 1/8 tsp (.625 ml) Curry Seasoning
  • Lettuce leaves
  • 4 slices whole-grain bread

Preparation


 
  • In a medium bowl, fluff tuna with a fork. Add apple, yogurt, Guacamole Dip Mix, and Madras Curry Seasoning. Stir to blend well. Filling will last 2–3 days in your fridge.
  • Place lettuce on two slices of bread and spread tuna on top. Cover with second slice of bread.
  • Cut diagonally and serve.

Tip


 

Tip: Not a bread fan? Serve on 1 C (250 ml) dark leafy greens along with ½ C (125 ml) cooked, drained black beans.
Make it vegetarian: Substitute the tuna for hardboiled eggs smashed with cooked egg whites
