Ingredients
1 cup
cherries & berries
boiling water
2 tbsp
sugar
12 cup
cranberry sauce
14 cup
crystallized ginger, chopped into small pieces, optional
14 cup
cognac, optional
1
cinnamon stick
1 pinch

Preparation
  1. In a large bowl, cover cherries & berries with boiling water and let stand for 10 minutes.
  2. Drain fruit, reserving 12 cup water. In a large pot, combine all ingredients and heat to boiling. Reduce heat and simmer for approximately 30 - 35 minutes, or until fruit is tender and compote is at desired consistency.
  3. Remove cinnamon stick.
Tips

Serve at room temperature over ice cream or fruit cake. Alternatively, chill and serve with a selection of cheeses, as a spread on toast, or stirred into yogurt. Also great with roasted lamb, chicken or pork.
