This is a perfectly balanced plate.
1 large yam
1 can (14 oz/398 ml) lentils
1 tbsp Vegetable Broth Mix, or broth mix of your choice
2 cans (7.5 oz/213 g each) unsalted salmon
4 cups arugula
2 cups fresh berries, your choice
2 cups broccoli slaw mix
Toppings (optional): Goat cheese crumbles, chia seeds
- Peel and cube yam. Place in Multipurpose Steamer. Cover; microwave on high 4 min.
- Meanwhile drain and rinse lentils. Drain salmon and break apart chunks using a fork.
- Remove steamer from microwave; add lentils and broth mix. Stir to combine. Cover; microwave on high an additional 1–2 min until lentils are heated through and yams are tender.
- Once cooked, divide yam mixture between four bowls. Arrange salmon, arugula, berries, and slaw mix in bowls. Drizzle dressing on top; top with additional toppings, if desired.
Switch it up—use fresh seasonal fruit such as peaches, blackberries, raspberries, or cherries.
