Ingredients

egg
1 cup
milk, your choice
2 tbsp
oil, + more for cooking
1 tsp
vanilla extract

Toppings (optional): maple syrup, fresh berries

Preparation
  1. In a large bowl, whisk mix with egg, milk, oil, and vanilla extract. Let batter rest 5 min; it will continue to thicken.
  2. For pancakes, heat 1 tsp oil in Sauté Pan over medium heat. Working in batches, scoop 3–4 pancakes into pan, leaving space between them. Cook until bubbles appear on top of batter and underside is golden brown, about 3 min. Flip each pancake and cook until bottoms are golden brown, about 1–2 min. Repeat with remaining batter.
  3. For waffles, follow your waffle maker instructions.
  4. Add toppings, if desired. 
Tips

Try mixing some fresh berries, sliced banana, nut butter, chocolate chips, or even Summer Berry Sweet Dip Mix into the batter!

Serve with 34 cup plain 2% Greek yogurt and 1 cup berries.
